Jodie’s Kitchen Three Day Taiwanese Cooking Course

This is a practical course, so you will learn how to make finished dishes, as well as the basic methods. This course focuses on Chinese and Taiwanese cuisine, and also includes one or two interesting influences from other Asian cuisines.

The goal of this kind of course is to help you understand how different elements of Asian cooking fit together, so you express your creativity instead of simply following recipes without really understanding them. Then you will be able to mix and match the various techniques to make a wide variety of complete meals. This will also give you a firm basis for learning more on your own in future.

We start the class with soy bean milk — as I very often hear from my Western guests, it’s a healthy drink, and it’s a very popular morning drink in Asia.

I will also talk about all the basic Chinese ingredients, so you will have a good idea about how to create Chinese cooking in future. Then I will use the basic ingredients to make some very simple dishes like soft tofu with Taiwanese dressing, and sour and spicy soup.

After introducing the basic ingredients, we focus on noodle and dumpling dishes. I will show you how to make the sesame paste, and a make few different noodle dishes based on it. But you can also use the sesame paste in western dishes, such as using it as a salad dressing or dipping sauce.

The dumplings we will make are based on bread dough (yeast dough). I assume most people are fairly familiar with bread dough. So after the class, you should be able to recreate how to make the dumplings very easily.

Normal class size: 1 – 4 students (larger classes may be possible). These are private classes for you and your friends/family/colleagues only.
Time: Classes usually start at 10am or 1pm and last about four hours each day, so the total class time over three days will be about 12 hours. We will try to arrange the classes to fit your schedule.

Jodie’s Kitchen Dumpling Cooking Class

Dumplings are one of the most popular dishes amongst Chinese, Taiwanese and Western people. There are many different kinds. In this class, we will make dumplings based on yeast dough, as yeast dough is similar to the bread dough used in Western culture.

We will make two kinds of these dumplings. Once you learn how to make and cook them, it’s very easy for you to modify the filling to use your own favorite ingredients and flavors.

Chinese people use bamboo steamers to cook dumplings, and Western people use an oven to cook bread. There’s actually a lot of similarity between the dough used for both of these, so these kinds of dumplings are very easy for Western people to learn.

You can choose to use your own preferred ingredients and season them with some basic Chinese flavors. Instead of cooking the bread in the oven, you cook the dumplings in the bamboo steamer, but they will be as easy to make as bread.

Apart from cooking the buns in the bamboo steamer, pan frying them in a wok is also a very fast way of making them. This way, it’s possible to serve more than 10 to 20 people at one time.

Using similar techniques, steamed sweet buns are a very popular dessert. We will be using the same kind of yeast dough to make sweet buns. It’s a very common food with a cup of Oolong tea in the afternoon, for local people.

Elephant mountain is in the heart of Taipei, just a few hundred meters from Taipei 101, but is rarely visited by tourists. Paved paths and steps provide easy access from the city.

The 183m (600 ft) mountain is part of a range that stretches about 10km (6 miles) and reaches heights of 375m (1200 ft). The mountains are thickly forested, providing protection from sun and rain. Numerous small temples and shelters provide frequent opportunities to rest, enjoy a drink and snack, and learn more about local culture.

Every walk is unique, as we will alter the route to meet guests’ requirements. This can even include providing vehicular access to avoid most of the uphill walking, if necessary – but please let us know your special requirements well in advance.

Cost: Our price for this combined one day (about 6 hours) activity is NT$5,000 for one student (about US$120 or 90 Euros), NT$7,000 for two students, NT$9,000 for three students. Sorry, but we do not offer discounts for these events.

Jodie’s Kitchen Taiwanese Cooking Class

In this introductory class we’ll look at about four recipes for sauces based on flower pepper (Xanthoxylum) and three or four more based on sesame seed. I will tell you how you can use these as the basis of a variety of other dishes, and we will cook a few of them together, and try them. I focus on using vegetables and other natural, healthy ingredients in my classes.

The flower pepper sauce or dressing can be made quickly and easily and you can also use it with entrees or stir-fried dishes. Flower pepper is actually a common ingredient in cuisine from Sichuan and Yunnan in Western China. Chinese people call it flower pepper, but it is also known as xanthoxylum.

Sesame seeds are another very commonly used ingredient, which have a widespread influence throughout Asian food culture too. The sesame sauce is very quick and simple to make, and also very easy to serve with noodles, uncooked vegetables, or meat. Both these flavors, flower pepper and sesame, have been adapted to Taiwanese cuisine and are very popular in Taiwan.

The class will take about four hours.
